A classic Italian cannoli recipe featuring crispy fried shells filled with a sweet ricotta cheese mixture and chocolate chips, dusted with powdered sugar.
Start off by putting your ricotta cheese in a cheese cloth to drain all moisture out. Sift your flour, sugar, and salt in a bowl. Throw in your room temperature butter, work that into your flour with your fingers, next throw in your egg and wine, and start forming your dough. After making your dough wrap it in parchment paper and let it sit in the fridge for about an hour. Grab your ricotta, sift in some powder sugar, throw in your chocolate chips and mix all together. Roll out your dough thinly, cut circles, wrap it around your mold and fry until golden brown. Once done, pipe your ricotta mixture into both ends and dip the ends into some more chocolate chips. Sift some powder sugar on top of them and all done.
