Start by boiling your egg for 7 minutes. Once cooked, transfer it to a bowl of ice water to stop the cooking process. In a cup, combine some mirin and soy sauce. Peel the cooled egg and place it in the cup to marinate.
Next, sear off the ground pork in a pan. Once it starts to brown, add the minced garlic, ginger, and half of the scallions. Sauté for a couple of minutes. Then, stir in the sesame oil and miso paste. Continue to stir until well combined. Pour in the chicken broth and additional soy sauce, then let the mixture simmer for about an hour to develop the flavors.
While the broth simmers, season your chicken breast with salt and sear it until cooked through and nicely browned.
Meanwhile, cook your ramen noodles according to package directions. Once the noodles are done, place them in a serving bowl. Strain the rich broth directly over the noodles. Top the ramen with the seared chicken, a nori sheet, the marinated soft-boiled egg, and the remaining fresh scallions. Serve immediately and enjoy.
